EBLEX held a practical demonstration and discussion afternoon for farm shops or other businesses involved in Direct Meat Sales at the Holbeach Campus in June.

This event looked at butchery techniques to maximise carcase value and versatility with a particular focus on maximising summer trade. There was also a demonstration of EBLEX retail costings calculator to help with calculating carcase yields and retail margins, as well as an update on meat quality and marketing support available from EBLEX.
