Zelica Carr, Chief Executive of The Ice Cream Alliance joined the Higher Education team at Holbeach on 7th June to participate in the Year 2 Foundation Degree student final presentations for their New Product Development module.

Students spent 6 weeks developing an Elderflower cordial dairy ice cream and were required to demonstrate their understanding of ice cream and its manufacturing process  They were expected to provide an overview of customer research, recipe development, cleaning, packaging, HACCP (Hazard Analysis Critical Control Points) and product costings.

The presentations also focused on a Lincolnshire themed ice cream made with Elderflower  cordial from Belvoir Fruit Farms  near Grantham. Support was also provided by Laddies Ice Creams of Holbeach and Moody’s who have provided the Ice cream machine on loan to Holbeach.

Zelica provided feedback at the end of the presentations and praised the students for their use of Elderflower and for promoting ice cream as an affordable treat. She also invited people to attend the Ice Cream Expo which is being held in Harrogate on the 1st -3rd November 2011.

Visitors to the University of Lincoln’s stand at the Lincolnshire Show will have the opportunity to sample the ice cream for themselves.
