NCFM’s stand was busy throughout the day.  Linda McWatt, Senior Lecturer in New Product Development at the Universityof Lincoln’s National Centre for Food Manufacturing, said: “It was a fantastic event and a great opportunity for Lincolnshire to show off its food and farming heritage. We were showcasing a waste reduction project funded by the Food and Drink iNet that we are running in conjunction with a large Spalding-based apple and pear importer. The basic aim is to show that imperfect fruit, which supermarkets will not take from their suppliers, is still ideal for further processing such as making fruit juices, jams and jellies. This rejected fruit can be used to make delicious products; over 900 samples of freshly pressed apple juice were tasted and were very well received by the public”.
